When flying out of Provo, we usually drop our bags off right when the counters open 2-hours before the flight. Then we meet family at a restaurant in Provo for lunch. By the time we're done with lunch, it's perfect timing to show up at the Airport 30-35 minutes before the flight, be one of the last few through security, use the restroom, and then go straight to the plane with our boarding group. There usually seems to be a half-dozen folks who waltz through security 20 minutes before the flight without any trouble, but I wouldn't recommend cutting it that close because TSA can technically close the security check-point 30-minutes before a flight. Flying out of PVU is about as pain-free as flying gets.
I had a ton of trouble with major 2-4 hour delays flying between Idaho Falls and Oakland two years ago on Allegiant. At one point my wife vowed never to fly Allegiant again, but money talks. We haven't had any notable delays or customer service bloops in the past two years.
