Teams are judged mainly by their performance against the teams on their schedule to this point, and that is mostly fair. Ranking a team against the remaining schedule (those they haven't played yet) would be a really stupid thing to do. That's not realism, that's pulling out the crystal ball. The final ranking at the end of the season will be based upon the performance against all teams on the schedule, and to some degree the strength of that schedule. But the rankings RIGHT NOW are merely based upon what people have seen so far, and a lot of bias mixed in.
Therefore, BYU is ranked 21, because they have done pretty well against expectations, and are 3-0. It's as simple as that. Your team is not ranked because, even though they are 2-0 and scored a lot of points, they've only played really crappy teams. They have only done what was expected of them to this point. Rankings for both teams will likely change as the season goes on, but future SOS is a completely idiotic metric at this point.
