Maybe not elite or what you want but seriously tell me who is that BYU can get with their limitations.

And if you are so worried about unproven/unprepared coordinators then I'm sure you want to apply the exact same standard for the next head coach. Apparently according to you he has to have proven head coaching ability at the college level, has to have won better than .700 in his head coaching duties and desires to come and is available for BYU and will accept the limitations BYU has (salary/honor code)...

I personally do think that BYU could have other options for head coach but if they had to be elite before they came with their proven experience, etc then I do believe that pool would almost completely evaporate and replacing Bronco becomes almost impossible to do.

Replacing Bronco today does not win you games tomorrow...BYU won't replace him during the season...it will take time for almost anyone new to do what we want them to do because they almost certainly will not come in as a proven elite coach and will have to learn on the job....and that is unacceptable to you for assistants so why would it be OK with you for a head coach?
