ive seen it done cold and warm
Those that I've seen do it warm bring their pit up to about 175 and smoke it till the internal temp is about 130.
I've also seen people cold smoke it too. I'll probably go the warm smoke route this time. Just till I know for certain my cure is right on. Don't want to take any chances.
