separate the point from the flat. In order to make true burnt ends you'll need this done anyway, since by the time you have good burnt ends the flat would be well overcooked.

I saw today that Winco sells the flat and point separately. Also full packer.

You can buy the point sold alone. I've seen them at Costco and Harmons.
