Just FYI, you don't incorporate as a C-corp. you just incorporate and then elect
C-Corp treatment for tax purposes. For Corporate law purposes, there is no distinction between C- and S-Corps. That's purely an IRS designation

I thought being a corporation in California was illegal.

It is, but it's not punishable by prison only by fines of up to 60% of income

Actually, if you want to be a C corp, you don't make any election
