If you are inexperienced with BBQ I recommend starting with Rudy's or Colter's.
Develop a palate for what quality brisket should taste like at the quality chain-bbq-level, then at the end of your trip go to Pecan Lodge. You will appreciate it that much more.

Since it is Texas, go for brisket and sausage. Pulled pork is not our thing. We suck a making pulled pork. I would recommend getting the meat lean, and dry with sauce on the side. That way you can taste the meat and control how much sauce you want on it.

If you want, this evening you can go with my wife and I to Rudy's in Denton.
