What settings do you use on handbrake

To get subtitles? Every time I try to copy A Bridge To Far I dont get subs when they speak German. I have been using handbrake and DVDfab but would like to get cleaner MP4s

About 1.5 GB per DVD, about 6 GB per Blue Ray. I'd get a 1 TB drive so you have

Any old hard drive will work fine. No need for NAS unless you're not hooking it
