It probably depends on the line of work, but for my department, we would need
the full two weeks to make sure the person trains another employee on everything that they do. Two weeks as it is would not be enough time so losing a day or two of those two weeks would really hurt us. The two weeks notice is a courtesy for this very reason so it is kind of selfish to give two weeks notice and then take time off during those two weeks. But again, it depends on the line of work.
