I put it right on the grill skin down. indirect heat (turn the burner under it
way down) and leave other burners on the grill that are away from the filet on high.
I've done brown sugar and ginger before but have not tried maple

I used this method. Lemons and pepper overnight. Turned out great.

2 minutes skin up, 5 minutes skin down. No foil needed
