I have looked around the internet and the consensus seems to be that the 321 method is the easiest, but the "3" might be too long for baby backs. I'm smoking 3 racks tomorrow and was hoping to toss them on before church and come back and start the "2" step.
Since the 3 seems to be so long, would I be better off dropping the temp on the 3, or shortening the 2?
Or if there is another easy way where I can start smoking before church and have them ready about 6 hours later, I'm all ears.
