I've done exactly what you're looking to do many times. The reality is that due to having to get the ribs on and get to church on time, then traveling back from church and changing, it becomes something more of 4-2-1. Nothing wrong with that.

I've used the Minion method for my coals and put the ribs on immediately after getting the coals started. It probably takes 1/2 hour to get up to temp anyways, which may be why it doesn't matter that they're on there for extra time.
