A couple recommendations:
If you want to trek all the way to Kodiak Island, Larson Bay Lodge is really good. The lodge is very hard to get to (three separate flights), a little pricey, but a lot of fun. You will see bears and you will catch a lot of fish (depending on when you go, of course).

If you're willing to do the cooking yourself, but would like to have someone guide your fishing trips, provide all the gear, etc., then I would go with Knudson Cove Marina in Ketchikan. Ketchikan is very easy to get to, as there are direct flights there from Seattle. The fishing out of Knudson Cove is second-to-none (depending again on when you go). They have fairly good lodging, but they don't do the cooking. If you get the right guide (ask for Kip, you won't regret it), he'll help you clean and process the fish and then they'll freeze it for you for shipping or for taking on the plane with you.

I haven't been back to Alaska for three years now, and I'm itching to go.
