brisket. watch some videos on how to trim it up. season with salt and pepper.
put on smoke for 12 hours.

follow the "midnight brisket" recipe for treager, even if you don't have a traeger. super simple. it'll be a big hit.

if you don't have a good meat thermometer, get one. and get one that has a separate reciever you can put inside the house. about $40 on amazon. then you can stay inside and dont have to go check all the time.
