My take...
Make a run for old faithful out of Rexburg. It's just over s two hour drive & I suggest you leave Rexburg by 7:30. Hikes there include a short hike to an overlook. I also like checking out the old faithful lodge-cool architecture. There is also a museum. From there head north to the Yellowstone Grand Canyon you can make stops along the way & see some of the geysers & features. There are also several picnic stops along the way that you can stop and eat lunch.
When you get to the Grand Canyon of the Yellowstone there is a museum, shops & the Grand Canyon of course. The artist point is probably the best view there but there are loads of other places to stop.
Travel back out through West Yellowstone, MT. You can grab dinner there. Our favorite place is Pete's Pizza.
My best advice is: don't go and try to see everything. Go and take your time to see a few things.
