when determining when it done. I bought a "second" wireless digital thermometer which is nice and it sends signals inside the house so I can smoke and watch tv at the same time

Just my $0.02, sear it first (grill or pan), then low heat on the smoker.

Yeah I have a wireless temp probe. I just put some salt on, then Montreal steak
