We took our kids snorkeling and they really liked it. We did a private island
retreat that was great. The island had a small "zoo" with monkeys you could play with and a great beach with only about 30-50 people on it.
Unless you leave the kids on the ship, you're not gonna get to do anything too crazy (zip lines, swimming with dolphins/stingrays/sharks, scuba).
