Here are some tips...
1. This is a tough race because it is a difficult time of year in Utah. Assuming that you are in Northern Utah, weather plays a big part into your training. So my first tip is to set up a good "pain cave." Most of the training I do this year on the bike will be indoors. Set up an indoor trainer on the bike. If you really want to get fancy, get the Wahoo Kickr. It is awesome. The benefit of training indoors is pretty big. I put on my HR monitor and do different types of workouts on different days. I focus on interval training, and long rides while watching sports or a movie. But you can really dial it in indoors because you don't have wind, traffic lights, weather, etc. Set your workouts to your heart rate and build up your power.

2. Once you get comfortable with the half marathon run distance, focus on hill training. The run course for the St. George 70.3 is pretty ridiculous. Lots of hills. especially after a pretty tough bike.

3. Lots of brickwork.

The only weight training I do is pull ups, squats, and lunges. I do those after my time on the bike. Take it for what it's worth. I"m not an expert in the field, but last year I really underestimated the difficulty of that run. It kicked my butt.
