I don't. At this point we'll just see how it goes. Up to 138° now.
Not sure what I can realistically do at this point. Guess we'll just have to eat reheated turkey if it's done too early.
I was planning on pulling it out at 145° and crisping the skin in the oven, but then it'd be done way too early
