Avoiding gluten makes a noticeable difference for my wife and I, so we do
But there will be plenty of wheat on the table--rolls, stuffing, pie (crusts), etc. for everyone else.

I do understand avoiding something like gluten (or sugar, or fat, or whatever) for personal reasons--if it works for you, go for it. But I don't understand at all imposing that on anyone else.
