smoker is all you need. Think they are like 40 bucks or less.
I use mesquite charcoal (junks of charred mesquite wood, and not typical compressed charcoal... I buy it at costco fyi) chunks and smoke for 3 hours (brisket) and then put in the oven wrapped in foil at 190 degrees.
3 hours of smoking is more than it can absorb..
