In fact, I would just about say that tri-tip is my favorite of all beef cuts, including steak, with the exception of the best ribeyes.

It's a short cook (50 min) so anything is fine.

I typically smoke tri tip for an hour....then slow cook for another 2 hrs

Ribs are good, Pulled Pork with a bone in pork shoulder is really good.

Go with a pork butt instead of ribs. Easier and less technique
