I typically smoke tri tip for an hour....then slow cook for another 2 hrs
at a 210 degree setting (I have a Bradley smoker). If I'm doing several tri tips, it takes longer, about 4 to 5 hours, depending on how many. I take the meat out when the internal temp is between 140-145 degrees and let it sit for about 15 minutes. It is ALWAYS tender, juicy and succulent.
