Fall or Spring, I'd take Santorini--warm enough and amazing people, food, and prices once the hordes of tourists leave. We were treated like royalty in October. It's a toss-up in the summer. Food, beaches, and weather will be ideal (assuming you want hot) at both, but you'll have a ton of company (cruisers into Santorini, low-cost carriers into Malta).
