-(1) 16-oz Package Shredded Coleslaw Mix
1/4 Finely Chopped Sweet Onion
1/2 C. Apple Cider Vinegar
3 T. Sugar
1 t. Salt
1/2 C. Mayo
1/2 C. Sour Cream
1/2 C. Blue Cheese, plus a little extra for garnish
In a large bowl add coleslaw and onion, toss together.
In a small saucepan, mix vinegar, sugar and salt. Slowly bring mixture to simmer. Remove when sugar is dissolved.
Place warm vinegar mixture over coleslaw and toss. Let it sit for 15 minutes, tossing every 5 minutes.
Put coleslaw in a colander and allow to drain for 10 minutes.
Put drained coleslaw in a large bowl. Add mayo, sour cream, blue cheese, and salt and pepper.
Stir and mix until ingredients are evenly distributed.
Chill for at least 1 hour before serving. Garnish with extra blue cheese before serving.
-This stuff is pretty awesome. It really shines through with pulled pork. we use it on sandwiches and tacos.
