Perfect timing. Reading CB in "the Library"...
I wouldn't do a flow hive. Too much explaining why, but I wouldn't.

There are a couple of local beekeeping supply stores or bee suppliers in your area. In addition, I would suggest you reach out to a local bee club - they are typically a good resource for finding honeybees, as well as you can find some classes you can take. You can probably google and find them. I know there is a bee store in Utah county, and I know there is a place in South Salt Lake County that sells bees, but I have no experience with anyone in Utah. It is getting really late in the year to order bees.

The reason they tell you to get more than one hive is that bees die regularly. If you have more than one colony, then you can split your colonies instead of buying them all of the time. It's not an inexpensive hobby, and that is if you don't buy bees every year.

To give you a taste, here is a video from three years ago, where we had our first honey harvest:

There are a few other beekeepers on the board.

There is also a guy in Highland, in Utah County, that places colonies in people's backyard. That would be a great way to try it out and see what you think. I forget his name though. I am not local there, but I found him in google. They sell a lot of lip balm and lotions I think.
