We lived there for a number of years so here are our highlights:
Epcot - this was our family's favorite park because it's usually pretty chill and has some underrated attractions. Our favorites are Spaceship Earth (the big ball), Living with the Land, Soarin', Test Track, fish and chips in the England pavilion, everything in the France pavilion, caramel in Germany, school bread in Norway. You'll also be there during the Flower and Garden Festival, so there will be a ton of food kiosks around the lake. They also set up a butterfly area that the kids love. Oh, and don't forget about Club Cool - it's the only place on Disney property where you can get free drinks.

Animal Kingdom - The Avatar stuff is all pretty amazing. We really loved the safari and the train to Rafiki's area (petting zoo, etc.).

Magic Kingdom - This place is usually crazy busy, but it'll have most of the things you can find at Disney Land.

Hollywood Studios - This has the new Toy Story Land, but from what I hear, it's a madhouse most of the time.

Disney Springs - Earl of Sandwich has very reasonably-priced food. D-Lux Burger is a family favorite (try all the different dipping sauces). And Frontera Cocina is the best food, but is a little more expensive.

If you're looking for somewhere to eat outside the parks, I highly recommend 4 Rivers. There are a number of locations around Orlando now, but the closest one will be in Kissimmee. It's amazing BBQ and desserts. Absolutely worth the drive.
