So from my couch I could have watched 12 of Memphis 14 games last season and could have watched all 14 if I was willing to sign up for ESPN+.
I don't think that BYU would have any worse TV deal or options than Memphis (who I chose at random). If BYU moved to the AAC, I'd bet/hope that the ESPN3 games would be made available on BYUtv and I'd be able to watch all of the BYU games just like I can right now (assuming games against UMass or @ Liberty in the future get TV coverage).
I don't buy the argument that moving to the AAC somehow gives BYU less exposure in terms of fans ability to watch BYU football if they want to do so.
