In terms of your discussion of the Prophets and the University of Utah, it might
help if you actually broke things down, as I've done for you below:

Joseph Smith--N/A
Brigham Young--Founded both schools (founded BYA because he saw that the University of Deseret would become something different than what he hoped)
John Taylor--N/A
Wilford Woodruff--N/A (Ute fans should love him more than they probably do, because in 1894, he rescued your school from going defunct because of an inability to compete with the Agricultural College in Logan and the Church University in Salt Lake City. Had he not done this, the school would have gone bankrupt and died.)
Lorenzo Snow--N/A
Joseph F. Smith--N/A
Heber J. Grant--N/A
George Albert Smith--graduated from BYA, attended one year of law school at the University of Utah
David O. McKay--graduated from the University of Utah
Joseph Fielding Smith--N/A
Harold B. Lee--N/A
Spencer W. Kimball--attended BYU
Ezra Taft Benson--graduated from BYU
Howard W. Hunter--N/A
Gordon B. Hinckley--graduated from the University of Utah
Thomas S. Monson--graduated from the University of Utah and BYU
Russell M. Nelson--graduated from the University of Utah

University of Utah: 5 Church Presidents
BYU: 4 Church Presidents

Current leadership:

Russell M. Nelson: graduated from the University of Utah
Dallin H. Oaks: graduated from BYU
Henry B. Eyring: graduated from the University of Utah
M. Russell Ballard: attended the University of Utah
Jeffrey R. Holland: graduated from BYU
Dieter F. Uchtdorf: N/A
David A. Bednar: graduated from BYU
Quentin L. Cook: graduated from the University of Utah
D. Todd Christofferson: graduated from BYU
Neil L. Andersen: graduated from BYU
Ronald A. Rasband: attended the University of Utah
Gary E. Stevenson: N/A
Dale G. Renlund: graduated from the University of Utah
Gerrit W. Gong: graduated from BYU
Ulisses Soares: N/A

University of Utah: 6
BYU: 6

In other words, both historically for the presidents, and currently, what you find is that the schools have relatively even numbers, rather than the dramatic imbalance you suggest. And the likelihood is high that the balance for Church Presidents will shift toward BYU with the next few presidents of the Church--of course that is all up to the Lord. And no one actually cares which school the President of the Church went to anyway, as I think most good members are far more interested in what he can teach us from the Lord than what color of graduation robes he wore 70 years ago.
