Why can’t there be one standard? Seems ridiculous.

Sam and Will denote strong and weak sides. Some teams adjust by boundary side and field side. Bo and Flash.

Why can't they use normal call signs? Sierra, Whiskey, Bravo and Mike?

Probably because they want them to be one syllable. They do use the one monosyllabic call sign you listed.
