As others have pointed out, it isn't so much that it's healthier for you, it's
that it is plant-based (so vegetarians and vegans opposed to eating animals can eat it) and more environmentally friendly (supposedly). On the second point, the amount of water it takes to produce a single hamburger is pretty crazy (something like over 600 gallons of water, mostly to grow the beef). Since the Impossible burger is plant based, it should have much lower water demands, which should be better for the environment (in theory).
