two years of significant volunteer service is exceptional for a young person.

I don't understand why you shouldn't list it either. But listing it as an LDS mission may bring anti-LDS bias. I've always told people to just list it as 2 years of international unpaid volunteer service. Could be peace corps, could be a mission for any religion, could be whatever.
