Pork tenderloin is consistently a good meat to prepare- its super easy, its amazingly cheap, and seems to always turn
out at least good to very good. Its not going to be the absolute best thing you have ever made, but for how cheap and easy it is, its got a really good ROI. My kids and wife were raving about a tenderloin that I prepared on Sunday. Here was my prep, which took about 5 min right when I walked in the door after church still with my suit on.

2 pork tenderloins (you get a pack of 4 of them for $8 at Sams Club, so this is literally just $4 in meat)
A rub consisting of: (a little over 1/2 cup total- I didnt really measure anything)
- Seasoned Salt
- Kosher Salt
- Black Pepper
- Garlic Powder
- Paprika
- Rosemary
- Chipotle chili powder (just a little bit)
- Brown sugar

Smear some cheap yellow mustard on the meat to get the rub to stick, spread the rub on all sides, and then bag them up for sous vide (and dump any extra rub in the bag with them- I have a vacuum sealer that I use for this). Then sous vide @ 140F for 1-2 hours (I did 2 hours). After the 2 hours is up, get a heavy pan, put some kind of fat or oil in it (I used clarified butter), and put it on the stove under high heat. Pat the meat to dry, and when you see the oil start to smoke a little bit, throw the tenderloins in there to sear and brown them up. Leave them for a minute or 2 on each side, and don't be bashful about letting it get dark (one of mine looked burnt at first, but it turned out just fine). This took another maybe 7 min from when I took the meat out of the sous vide bath to when it was ready to eat.
