Your diagnosis is wrong. Both MCLs are "damaged", but you've never had an
injury to cause the damage, and you've never had an MRI to prove you have an MCL sprain/partial tear? Doesn't add up. MCLs are not really susceptible to overuse injuries the same way other ligaments and tendons are. Having this on both sides at the same time would be extremely unusual. You need ortho/sports med to examine you and probably an MRI as well.

If a chiropractor adjusted you and caused damage to your knees, things really went off the rails. Don't see a chiropractor for knee issues. Actually, I'll just shorten that to don't see a chiropractor.
