FM shouldn’t be done past medium (medium rare, really) but you should switch cuts. Do a Rib Eye or New York done medium
(or medium well if you absolutely cant do medium like you’re saying). Little more fat that will fully render and make the whole thing much better than a medium to medium-well fillet.
I’m 100% medium rare on fillet, but even I will Cook a rib eye to medium sometimes.

Filet mignon, Medium, is gross. I never should've listened to the meat snobs who claim Medium Well is too much cooking.
