Just to be clear, I’m not saying a rib eye will be better for you than a fillet in the fillet seems too rare at that
level. I’m saying that if you’re really put off by a medium stake and want it cooked further, the ribeye or New York will maintain better flavor even if overcooked by mine or other stake snobs’ standards.
