CoachSpeak Intervention Needed
I’m making a peanut butter pie today...
it is my families favorite desert so I thought I’d make it for tonight’s meal when we break our fast.

For those of you that have never had a peanut butter pie they are absolutely delicious. I made my first one about 10-15 years ago when I saw it watching Emeril back when he had that cooking show.

So I made it and it is really good. I’ve made a couple of changes to his recipe to make it both easier to make and in one way I think an improvement.

For instance he makes his crust out of graham crackers and it is good but I decided to try to make mine out of Oreo cookies after seeing one of those pre made Oreo pie shells at the store. I think it tastes better with my Oreo crust.

A change I made to make it easier is that I use the chunky peanut butter rather than the smooth peanut butter and eliminate having to use peanuts and adding them. Plus I like the much smaller bits of peanut in the chunky peanut butter better than the larger peanuts.

I also double the filling recipe and make it a much larger thicker pie. You can get more pieces out of the pie this way because you can cut them narrower because they’re taller. I also like the ratio of crust to filling better as I felt the crust was a bit too much with the smaller amount of filling.

Lastly rather than using chocolate I have to chop up and/or shave to make the topping I use chocolate chips. They melt just fine making the topping so it just saves some work and it is a little bit of a time consuming project to make one of these. His recipe currently online is a little different than the one he used to have. On this one he doesn’t melt chocolate and pour it over the pie to coat it whereas that is how he used to do it. I still do that because it is better so basically you melt some chocolate chips in with some heavy cream then after your pie has set in the fridge for a couple of hours you pour it over the top and just let it run all over the pie and down the sides then put it back in the fridge to cool and let that chocolate set. I’m assuming he eliminated that to make it easier and quicker to make but it’s too good to eliminate in my opinion so I take the extra time and effort.

So I recommend any of you that like to cook and love desert to try it. I’ll post Emeril’s recipe here and if you want to use my modifications I’ve already listed them above.

Trust me on this because I know it sounds like an odd desert but these things are absolutely delicious.
