Ever try to use the pizza attachment to sear steak?
A guy at the bbq shop suggested it. He said he uses a cast iron grill inside the pizza attachment for steak, and gets temps to 800-900.

This is the right answer. Santa Maria rub, 225 until 125, then reverse sear.
