Sounds like you have the time and resources to rebuild a very nice car.
If I was in your situation I would start searching for an older beat up muscle car and dump all my time into rebuilding it. With Youtube these days there is not much the average person can't figure out on their own.
Late 60s Mustang or Camaro is super doable if you can get your hands on one. Restore it to original or customize the crap out of it. It sounds like you need a challenge so assuming you dont already work with your hands this could be a good option.

Find more ways to serve others. Humanitarian causes, go on a mission, serve in your community,etc.,.
