I'm the least mechanically inclined person in the US but do have a car interest

When I was somewhere between 10-12 my dad and I (mostly him) restored a 1930 Ford Model A, and it was fun. I literally cant even change my own oil but you're right it does sound like an interesting idea. (67 GTO or a 66-69 Firebird have always caught my eye)
