Not all meat is best smoked. A 3 pound hunk of brisket flat is best slow braised. It just won't smoke well. Also, next time you smoke a brisket, after you let it rest for 45 minutes, let it rest for another 2-3 hours. Wrap it, throw it in a cooler, cover it with a towell, and let it sit. It won't get cold, it'll just get awesome.
