Depends on if you're a hiker or just wanna see the views( a few suggestions)
These are mine just based on keeping driving to a minimum. You can basically make any of these from Kanab with an hour other than Mon. Valley.
For just views
1) Bryce Canyon
2) Zions doing at least the boardwalk into the narrows
3) North Rim Grand Canyon
4) Cedar Breaks
5) Vermillion Cliffs
6) Monument Valley

If you were wanting to hike, keeping myself in SW Utah, my favorites are

1)Bryce Canyon ( Navajo Loop) Easy hike and you can extend it into a longer hike walking the Queen's Garden
2)Lower Calf Creek Falls near Escalante
3) Zion's (Emerald Pools and Angels Landing) Both get packed during the summer and would do them as early as possible on a weekday if you do either. The Subway and Narrows are both awesome hikes, but are much longer.
4) North Rim-has a few trails. I prefer north rim to south just based on location and temperature during the summer
5) Buckskin Gulch- Just make sure to watch the weather really closely if you do this one
6)Kannarreville Falls-Have to have a permit and pay, but it's a great hike and they limit it to 150 hikers a day so doesn't get too crowded
