Measure and record things like it’s weight, time, and smoker temperature (using a dual probe thermometer, don’t trust your smoker’s claimed temp).
Don’t be afraid of messing it up. Even if it doesn’t turn out the way you want it is great to freeze and save for chili.
A good smoker practice is to pick an item and make it once a week for a month. After you’ve done it 4 times you will have learned a lot.
