Just got a new flat top grill for our back patio. I'll season it tomorrow,
but I'm new... Any recommendations on how I should do that? Any specific oil? How many times should I add oil?

I used flax seed. I initially did 4 coats for the 1st seasoning.

Why flaxseed? I heard it can smell too. Would it be bad to use canola?

I think you can use any oil and be fine. I use canola after every cook
