I had some brisket and t-bones that suddenly needed to be cooked today. So, I seared them (with salt and pepper) on all sides, heaped them up in a dutch oven (fatty side of the brisket on the bottom), threw in a stick of butter, covered it, and set it in the oven at 200 degrees.
