I've mentioned Coco Shrimp before. A couple of LDS guys and their wives started a food truck in North Fort Worth and grew a pretty solid following. They got plenty of accolades in the DFW area and the truck did well for quite a while. Last year they were finally able to expand and open a full restaurant. They put everything they had into the business and even moved in with their parents for a few years to get everything going. They did most of the work on the restaurant build out themselves, and they have built two food trucks themselves too.

As the COVID shutdowns started I felt sick for these guys. After pouring everything they could into getting started I thought the close downs would be a huge obstacle for them. I was very wrong and they've made it work throughout the economic slow downs. The restaurant, in downtown Fort Worth, is continuing to grow its business well. The Food Truck in North Fort Worth has stayed open and has actually been overwhelmed by business. Things are going well enough that yesterday they were able to announce they signed a lease last week to expand and open another restaurant even further north in the city.

If you know these guys you can't help but be happy for them to see this dream really starting to take off. It is a great formula with a unique but simple menu. There really isn't another restaurant in the area to compare. If you are in DFW and get the chance I'd recommend looking them up. They've got a sampler plate if you want to try all of the flavors but if you go to the restaurant you can get the Coco Tacos (not available at the food truck) which are definitely the best.
