First brisket is on the pellet smoker now...
Wish me luck. I think I may have trimmed too much fat off. Hopefully not.
Started at 10pm pacific, 195 degrees. I’ll wrap at 6am and up the temp to 250 and plan to go another 8 hours, until 2 pm.
Fingers crossed...

On my first brisket I trimmed too little fat. You don’t need a lot.

That's clearly happening now...flat is over 200, point is 183. Grill set at 250.
