kotacoug Intervention Needed
Stick with NY strip, sirloin, Tri tip, or tenderloin. Avoid Ribeye
Plan on blasting it on an iron skillet for 30 sec a side.

If you really want to do a rib eye dear it longer. But rib eye isn’t the best option due to the fat level for sous vide. IMHO don’t @ me.
