I think we play the 2020 season starting in Dec/Jan and then the 2021 season is delayed a little bit (say late Sept) and back to normal schedules in 2022.

Football makes too much money to do differently. It's the same reason construction of the Raiders' stadium didn't stop even as workers were getting sick. Constructing a football stadium was deemed "essential" because it's worth a lot of money. Same will be true of college football as soon as they feel like they can make it work.
