Cheesy Gordita All-American
Because of certain life choices, I've become a cheater, but it's totally worth it.
Because of certain life choices, it's not really feasible for me to get a real smoker. Not even a pellet smoker. I've made my peace with it and have worked hard to get pretty good bbq out of my oven. Granted, it's never going to be as good as actual smoked ribs or brisket, but I'm churning out tender, flavorful meat, with a pretty decent texture.

I did another brisket on Sunday and was really happy with the results. I did a 6lb brisket on Sunday and it took about 8-8.5 hours to get to temp and hold for the right amount of time. To get the texture and flavor, I throw the brisket with the rub already on onto the top rack of the oven with the broiler on high. With the brisket, I leave it almost touching that burner for about 10 minutes on each side so I start to get some charring and texture. I then pull it out, put some liquid smoke and apple cider vinegar on it, wrap it in foil, and set the oven to 295 with a meat thermometer in there. Once it temps to 160, I open up the foil and let it rise the rest of the way to 200 and then let it hold that temp for 30 minutes before wrapping it and dropping it in the cooler. Opening it back up gives it that texture. I spoon the meat's on liquid back over it every 40 mins after I open the foil too. This is pretty similar to how it's done in the smoker. I also put a tray with a small amount water with liquid smoke and vinegar on the rack below the brisket the entire time and you need to check that tray ever so often to refill it.

All in all, it's a respectable result that produces really tender beef. I'm on night three. The first two nights were brisket tacos with homemade flour tortillas and tonight was brisket and cajun sausage macaroni and cheese.

I share this to encourage some of you may not be able to get to pit boss or even pellet boss status, but you can put out a pretty legit result that some yankees may even mistake for smoked brisket.
